  • 4 to 5 giant candy potatoes
  • 1/2 cup maple syrup
  • 2 eggs, barely crushed
  • 1 teaspoon vanilla extract
  • 1 teaspoon smoked paprika
  • 1 teaspoon cinnamon
  • 1 cup low-fat lactose free milk
  • 1/2 cup (2.5 oz) chopped pecans
  • 1/4 cup brown sugar
  • 1/4 cup complete wheat flour
  • 2 1/2 tablespoons canola oil (or melted butter which isn’t lactose free)


  1. Coat a 2 -quart casserole dish with cooking spray. Preheat oven to 350 levels. Bake potatoes for 50 minutes or till tender.
